Gluten Free Salted Date Caramels

Salted Date Caramels



Ingredients:

2 c. Fresh Life Medjool Dates - Pitted
3/4 c. Coconut Oil
1/4 c. Cacao Powder
1 tsp Vanilla Extract
2 Tbsp Coconut Oil (extra, at room temperature)
1/2 tsp Sea Salt Flakes
1/4 c. Fresh Life Coconut Flour
Sea Salt flakes (extra, for sprinkling)

(I found I had left over coconut flour and cacao mix so you may like to reduce these ingredients).

Method:

1. Place dates in a bowl and cover with boiling water for 10 minutes (until softened), drain.

2.  Melt coconut oil in a small pan.  Combine this oil with the sifted cacao powder in a bowl and stand until slightly thickened.

3.  Process the dates (I just used my nutrabullet), vanilla, the extra coconut oil, and salt.  Transfer to a bowl and cover.  Freeze for 30 minutes.

4.  Line a slice baking tray with baking paper.  Place coconut flour in a bowl. 

5.  Using damp hands roll date mix into balls. Roll balls into coconut flour and then dip the balls into the cacao coating. Freeze for 10 minutes.

6. I like to dip the balls in the cacao coating another 2 times and then sprinkle with salt.
